SALMOREJO
Salmorejo is a purée consisting of tomato and bread, originating from Cordoba in Andalucia, south Spain. It is made from tomatoes, bread, oil, garlic and love. Mucho amor.
It is a thicker version of gazpacho – old tomato soup – and is traditionally served in small terracotta bowls and garnished with chopped jamon and egg.
We don’t have this rotated onto the menu often in winter, but this is a CRACKING summer dish. Delicious and refreshing.
